It's USDA Prime Steak Cuts!

USDA Prime is the United States Department of Agriculture's highest grade of beef. It has the most marbling of all grades of beef. This marbling is made up of tiny flakes of fat spread through the muscle, which melt during cooking, making the meat tender and flavorful.

The Butcher Block carries USDA Prime steak cuts, as well as Certified Hereford Beef. Hereford Beef is a leaner choice of beef, with just enough marbling to give it great flavor and tenderness. Although either choice is excellent, USDA Prime is, and will always be the "King of the steak cuts."

Many top steakhouses and restaurants in the country use USDA Prime Steaks. However, due to the high cost and low availability, Prime meats are rarely sold in grocery stores or meat markets. The Butcher Block is proud to be one of the few places serving both USDA Prime and Certified Hereford.
